Whiskey BBQ Meatloaf
As far back as I can remember, meatloaf has been one of my favourite comfort foods. Everyone makes it a little bit differently.
Questions abound as to how to get it nice and juicy, flavourful, and different.
Well, my secret weapon is my Whiskey BBQ sauce.
This is a juicy, flavourful meatloaf. The star of the show is the Whiskey BBQ Sauce.
- 2 Lb Lean Ground Beef
- 3 Eggs
- 2 Cups Panko Breadcrumbs
- 1 1/2 Ladels Whiskey BBQ Sauce
- 3 Tbs Garlic Powder
- 1 Tbsp Dry Mustard
- 1 Tsp Sea Salt
- 1 Tsp Fresh Ground Pepper
- 1 Medium Onion (Optional) Diced
Preheat oven to 375 degrees F.
In a large mixing bowl, add ground beef, eggs, and spices. Mix with your hands until all ingredients are throroughly combined.
Add the Bourbon BBQ Sauce. Mix with your hands until thoroughly combined and really messy.
Add the panko breadcrumbs ¼ cup at a time, mixing until completely absorbed and the meatloaf is at a consistency that allows shaping. Do not add too much. We don’t want dry meatloaf.
Grease two regular size bread tins. Fill each tin with equal amounts of the meatloaf mixture.
Place in the oven and bake, uncovered, for 45 minutes. Remove from the oven and ladle the remaining BBQ sauce equally over each meatloaf. Replace in the oven and bake for 15 minutes. Turn the oven to Broil, and let cook for another 4-5 minutes to caramalize the BBQ sauce.
Serve hot with Masshed potatoes and corn (Or whatever the heck you want).
BBQ Sauce fit for ribs, burgers, and even meatloaf. The star of this show is Jack Daniels Olde No. 7 Tennessee Whiskey, and the co-star is liquid smoke.
- 1 Cup Ketchup
- 3/4 Cup Jack Daniels Old No. 7 Tennessee Whiskey
- 1/4 Cup Worcestershire Sauce
- 1/2 Cup Brown Sugar
- 1 Medium Minced Yellow Onion
- 4 Cloves Minced Garlic
- 1 Tsp Dry Yellow Mustard
- 1 Tsp Lemon Juice
- 1/2 Tsp Liquid Hickory Smoke
- 2 Tsp Smoked Paprika
- 1/4 Tsp Cayenne Pepper
- Salt & Pepper to taste
In saucepan, mix the Ketchup, Jack Daniels, Liquid Hickory Smoke and Worcestershire Sauce. Bring to a boil. Add all the other ingredients.
Turn down to a simmer and cook for 20 - 30 minutes. Taste to ensure the alcohol has evaporated. Once the taste is smooth it is ready. Allow to cool.
Place in an airtight container. This will keep in the fridge for a week or so. The sauce can be used immediately for your favourite BBQ sauce recipes.
