Cornbread With a Citrus Twist

This is just a recipe I picked up in my travels.  Everyone loves cornbread.  It is a great side dish for stews, chilis, and even bacon and eggs.

As much as I love cornbread, I managed to get bored of it.  So I tried this interesting little twist.  ORANGE flavour.

Fluffy, delicious cornbread with an orange twist.

  • 1 cup all purpose flour
  • 1 cup cornmeal
  • 1/3 cup sugar
  • 2 teaspoons baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 cup fat-free milk
  • 1/2 cup eggs
  • 1/4 cup orange juice
  • 2 tablespoons canola oil
  1. In a large bowl, combine the first six ingredients. In a small bowl, combine the milk, eggs, orange juice and oil; stir into dry ingredients just until combined (batter will be thin).
  2. Pour into a greased 9-in. square baking pan. Bake at 400° for 18-22 minutes or until a toothpick inserted near the center comes out clean.
Recipe Notes

For a little extra ZING, add the zest of ½ an orange to your batter.
