Cornbread With a Citrus Twist
This is just a recipe I picked up in my travels. Everyone loves cornbread. It is a great side dish for stews, chilis, and even bacon and eggs.
As much as I love cornbread, I managed to get bored of it. So I tried this interesting little twist. ORANGE flavour.
If you are like me, you like syrup on your corn bread. For a different twist try: Orange Honey Syrop
- 1 cup all purpose flour
- 1 cup cornmeal
- 1/3 cup sugar
- 2 teaspoons baking powder
- 1/2 teaspoon baking soda
- 1/2 teaspoon salt
- 1 cup fat-free milk
- 1/2 cup eggs
- 1/4 cup orange juice
- 2 tablespoons canola oil
In a large bowl, combine the first six ingredients. In a small bowl, combine the milk, eggs, orange juice and oil; stir into dry ingredients just until combined (batter will be thin).
Pour into a greased 9-in. square baking pan. Bake at 400° for 18-22 minutes or until a toothpick inserted near the center comes out clean.
For a little extra ZING, add the zest of ½ an orange to your batter.
