Amazing Asparagus

I was never an asparagus eater until I was in my 40’s. Someone mentioned a recipe similar to this one, and I tried it. I have played with this recipe for about 6 years and it is just about the tastiest vegetable dish I have eaten.

Asparagus steamed, then sautéed with bacon fat, butter, garlic and lemon.

Ingredients
- 2 bunch Asparagus
- ½ cup Butter portioned
- 6 cloves garlic minced
- 1 slice bacon thick cut in half
- 1 large lemon halted
- Grated Parmesan Cheese
Instructions

Cut bottom ends of asparagus and discard. Steam asparagus in steamer until all asparagus is sweating, has turned dark green and is still slightly crunch.

In two cast iron skillets, melt ¼ cup (each) of butter and add ½ slice of bacon and minced garlic.

Once asparagus is steamed and butter is just sizzling, move asparagus to skillets. Using a pair of tongs, keep the asparagus moving in the skillet to ensure an even cook.

Once asparagus is just soft (about 5 minutes), squeeze the juice of ½ lemon over all the asparagus and rotate once again with tongs. Sprinkle with fresh grated parmesan cheese.

Serve Hot with lemon available.
