Cornbread – Orange

This is a sweet take on an old favorite.  There is nothing like cornbread, well, maybe.  Orange flavoured cornbread with Orange Syrup…  That could be better…

A delicious side dish, this cornbread is excellent beside any dish with heat that may need a little tempering. It is also good as a standalone snack.

  • 1 cup all purpose flour
  • 1 cup cornmeal
  • 1/3 cup sugar
  • 2 teaspoons baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 cup fat-free milk
  • 1/2 cup eggs
  • 1/4 cup orange juice
  • 2 tablespoons canola oil
  1. In a large bowl, combine the first six ingredients.
  2. In a small bowl, combine the milk, eggs, orange juice and oil; stir into dry ingredients just until combined (batter will be thin).
  3. Pour into a well greased 9-in. square baking pan, or a well greased, preheated LARGE cast iron frying pan.
  4. Bake at 400° for 18-22 minutes or until a toothpick inserted near the center comes out clean.
