Cornbread – Orange

This is a sweet take on an old favorite. There is nothing like cornbread, well, maybe. Orange flavoured cornbread with Orange Syrup… That could be better…

A delicious side dish, this cornbread is excellent beside any dish with heat that may need a little tempering. It is also good as a standalone snack.

Ingredients
- 1 cup all purpose flour
- 1 cup cornmeal
- 1/3 cup sugar
- 2 teaspoons baking powder
- 1/2 teaspoon baking soda
- 1/2 teaspoon salt
- 1 cup fat-free milk
- 1/2 cup eggs
- 1/4 cup orange juice
- 2 tablespoons canola oil
Instructions

In a large bowl, combine the first six ingredients.

In a small bowl, combine the milk, eggs, orange juice and oil; stir into dry ingredients just until combined (batter will be thin).

Pour into a well greased 9-in. square baking pan, or a well greased, preheated LARGE cast iron frying pan.

Bake at 400° for 18-22 minutes or until a toothpick inserted near the center comes out clean.
