Kosher for Passover Grilled Cheese
Passover is here once again. As soon as the sun sets on the first day I have the urge to pour a nice big bowl of Cheerios, drown them in milk, and then eat them and chase them with about 4 slices of toast made with homemade bread…. Alas, the urge goes away as soon as I pull out the ingredients for my favourite, extremely simple Kosher for Passover snack. Yup, the good old fashioned grilled cheese.

Melt a good portion of margarine in a large frying pan.
Matzo crackers are brittle and ungiving. Bread is not. So we have to make the matzo crackers more conducive to frying. There is a simple solution. I simply gently run warm water over the crackers, holding them gently with two hands until they are softer. Be careful. They are fragile.
Once softened, place a matzo cracker in the sizzling margarine. Place four slice of yellow American cheese on each corner of the cracker. Place the second softened cracker on top. Press down with spatula to stick crackers to cheese. Let these fry until the cracker is golden brown and beginning to crisp again. Turn over and do the same to this side.
Place on plate, cut into 4 pieces, dip in ketchup and enjoy!!
